The secret for chilli sauce lies in lies in balancing the flavour of the sauce with the heat of the chilli. We all love a little spice in life, the key word here is a little, be careful not to make it too hot so it doesn't over power the flavour of the tomato.
The following points, in no particular order, will be taken into consideration when exhibits are judged:
- Consistency and colour
- Balance of flavour and heat
- ‘Wow’ factor
- Overall presentation
